Fall is upon us, bringing with it the cooler weather.
Most of us North Americans do not eat enough vegetables. This is a tasty, hearty Vegetable and Turkey Soup that is delicious and nutritious. It is a great comfort food that is rich in vegetables. Sure to become an ideal family favorite during the cold times of the year. I know I am personally not a soup lover, but I always reach for seconds of this one.
This recipe calls for fresh Turkey, but you can substitute chicken. It can also be a great use for leftover Chicken or Turkey, which will allow you to cut cooking time in half.
